Shauna’s Superfood Rice
Whole-wheat rice is one of my favourite ingredients to play around with. Especially when it’s packed with loads of greens and super-food ingredients to keep me energized for the entire day! This recipe is definitely a go-to for me.
|Makes 2 Servings|
1 Cup. Pre-Cooked Brown Rice 4 Sliced up Okra’s
1 Cup. Chopped Kale
1/2 of a Cucumber Chopped
1/4th Cup. Chopped Red Onions
1/4th Cup of Sliced Mushrooms
1⁄2 Tbsp. of Ground Tumeric
1 Clove of Finely Chopped Garlic (Or 1⁄2 Tbsp. of garlic powder is fine too)
1 Tbsp. of Coconut Oil (Olive oil works fine as well)
Salt and Pepper to Taste
LET’S GET STARTED!
- Heat up your oil in a nonstick skillet over medium-high heat. Add your garlic and all over your veggies and turmeric into the pan. Sauté for about 5mins. This should break down the kale a bit and expose the flavors in your dish.
- Now add your pre-cooked brown rice. Stir well to combine all ingredients for about 4 minutes, and then remove from heat.
- Stir in your salt and pepper to taste. Pour into a bowl. Add a little Srirracha or soya sauce for some added flavor if you’d like and enjoy!
