Shauna’s Thousand Island Kale Salad
Kale is a super-food that’s packed with loads of fiber and digestive aiding qualities. This is why I try my very best to incorporate it into my daily nutritional intake. Kale can tend to be a little bitter, but once you try my Thousand Island Kale Salad recipe, you might beg to differ. It’s sooooooooo good guys…like mouth watering. I promise you’ll be addicted after one try!
1/2 Bundle of Kale
1/2 Carrot Shredded
1/4 of a Red Onion Sliced Thin
2 Tbsp. Dried Cranberries
2 Tbsp. Shaved/Sliced Almonds
1/4 of a Ripe Avocado Sliced
3 Tbsp. Vegan Thousand Island Dressing
LET’S GET STARTED!
1) Start by tearing your kale away from the stems. Then rip the leaves into small, bite-sized pieces. Wash your kale and dry off the excess water in a salad dryer (or you can dry it using a clean table cloth or some paper towel)
2) Place your kale in a large serving bowl and top it with your remaining ingredients. Toss really well for a couple minutes until everything is combined nicely.
3) Let your salad sit for 10mins or so before eating. This will help the dressing break down the kale a bit, leaving your salad with a perfect soft & crunchy balance. Top with a few more slices of avocado for presentation. Enjoy!
